2006 Jeep Commander 5.7 L Hemi coolant loss

The vehicle recently leaked coolant from the rear heat pipe(s) that are above the muffer that go into the rear heat unit, the coolant tank was empty as a result of this.

The temperature started to rise and than after the engine had been off and than switched on again it started to rise again and than suddenly dropped to a quarter.

I don't really understand your question but it sounds like your coolant became too low and developed and air pocket in the system. When you added more coolant the air pocket remained until the thermostat opened again and allowed the air to escape. I think this would have been your temperature spike then sudden drop that you saw. Have you fixed the leak? If not keep an eye on the coolant reservoir to be sure it does not empty before adding more. It will ensure air is not introduced to the system.
