So I recently installed a 2.25" RR lift, and have been doing a lot of research on the recommended tire size. The company I bought it from said to install 265's with 1/4" spacers but I am nervous that they will rub. If you have any experience with this or have any recommendations for what I should do it would be appreciated. Also, I was considering going with 17x8.5 fuel hostage's for wheels. Would that work or should I go with a 17x9???

I went with a 17x9. The tires may rub a little. You have to do the pinch weld and heat gun on wheel well trick. Remember if you are buying wheels to get the correct offset/ backspacing. Dont buy an actual spacer separate.
